In some regions of the country the pollutants are so bad that they will begin to boil off towards the end of a distillation cycle. This could result in a detectable smell or taste. A timer can prevent that by shutting down the process a few minutes early. For example, if you set the timer for 5 hours, the unit will produce almost a gallon, but there should still be a cup or so left to discard which will be concentrated with the pollutants.

The units are also easier to clean when you use a timer because the water scale is still mostly suspended in the water remaining in the boiling chamber.
